Evaluation

The Whole coursework

I have learned to cook a unique recipe. I like the whole process though it was tiring and I had to use to computer many times, so I almost got 'killed' by my parents.
Sadly, I really have nothing much to say, just mainly that it was enjoyable and way tiring and I am very happy it is finally over!

Exam DAY!!! [2 September '09]




Baked Spaghetti

  • 40g of onion

  • 30g of green capsicum

  • 5g butter

  • 200g tomatoes with liquid, cut up

  • 20g olives, drained

  • Oregano

  • 120g chicken meat, minced

  • 100g spaghetti

  • 100g Cheddar cheese

  • 1 can cream of mushroom soup

  • 10g Parmesan cheese


Method

  1. Boil spaghetti.

  2. Cut up onion, green capsicum, tomatoes and olives at same time.

  3. Saute onion and green capsicum in butter until tender.

  4. Add tomatoes, olives and oregano.

  5. Add minced chicken. Simmer for a while.

  6. Grease the two baking dish as it simmer.

  7. Place a quarter of the spaghetti in one dish. Another quarter in the second dish.

  8. Top the spaghetti with a quarter of the mixture in one dish, another quarter in the other.

  9. Sprinkle with 25g of cheddar cheese in one dish, 25g in the other.

  10. Repeat layers.

  11. Mix soup and water until smooth; pour over casserole.

  12. Sprinkle with parmesan cheese.

  13. Bake at 230 degrees Celsius for 15 minutes.

Modified Recipe 2 [15 August '09]

Starting....

Ingredients:

  • 100g spaghetti

  • 50g cheese

  • 100g chicken meat

  • 60g celery

  • 5 tbsp spaghetti sauce

  • 4 mushrooms, drained

  • 2 pie pans


Method


  1. Boil spaghetti.

  2. Brown chicken with celery stir in mushrooms and spaghetti sauce.

  3. Place spaghetti in pie pans.
  4. Pour meat mixture over spaghetti.

  5. Sprinkle cheese over the mixture.

  6. Bake at 180 degrees Celsius for 30 minutes.

    Sensory Evaluation Results?

    It tasted slighty sour because of the large amount of spaghetti sauce used, at least it wasn't dry. With more cheese, it tastes better as well.

Modified Recipe 1 [14 August '09]

Cooking at Home
Ingredients

  • 40g of onion
  • 30g of green capsicum
  • 5g butter
  • 200g tomatoes with liquid, cut up
  • 20g olives, drained
  • Oregano
  • 120g chicken meat, minced
  • 100g spaghetti
  • 100g Cheddar cheese
  • 1 can cream of mushroom soup
  • 10g parmesan cheese
First, i boil spaghetti.
Next, cut up the onion, green capsicum, tomatoes and olives.
Saute the onion and green capsicum in butter until tender.

Add tomatoes, olives and oregano.
Add minced chicken meat.

Simmer for a while [till meat is cooked.]
Grease the baking dish. Place half of the spaghetti in the dish. Top the spaghetti with half of the mixture. Sprinkle with 50g of cheddar cheese. Repeat layers. Mix soup and water until smooth. Then, pour over the spaghetti. And sprinkle with parmesan cheese. Bake at 230 degrees Celsius for 15 minutes.

Sensory Evaluation Results?
Not as salty and oily as the previous non-modified recipe. It looks better to [maybe a little burnt, forgot to check!] The soup was still thick so i'll have to use more water. It has a strong mushroom taste.

Original Recipe 2 (5 August '09)

It's called...

SPAGHETTI PIE [crowd cheers]

Ingredients:




  • 100g spaghetti
  • 1 egg
  • 50g cheese
  • 100g chicken meat, minced
  • 3-4 tbsp spaghetti sauce
  • 4 mushrooms, drained
  • 1 pie pan
I started off by boiling one-third of a pot of water. When it is bubbling, I put in the spaghetti in to cook.
Then, I brown the chicken
(down here)
with the mushrooms [all sliced up] and spaghetti sauce, and let it simmer for about 10 minutes. Once the spaghetti is ready, i place it in the pie pan with 30g of cheese and the egg[beaten up(badly!! XD)]. I pour the meat mixture over the spaghetti.








Cover it with foil and bake in heated 350 degrees oven for 25 minutes.















Remove the foil, add 20g of cheese and bake for another 5 minutes. End Product: ->













Yahh! Done!
The Sensory Evaluation Results?
It was too dry and hence tasteless. It looked pale yellow and red all over. It was also hard.

Changes to make:
I would need to add more sauce[maybe 1-2 more tbsp] and add some vegetables. I would also need more cheese to cover the spaghetti entirely so that it would not become too dry.

The Making of ORIGINAL RECIPE 1 [29 July '09]

Haha. Finally, I can cook in the school kitchen once again!!! and make a HUGE mess!! [jkjk]

ORIGINAL RECIPE 1

here are the ingredients:
  • onion
  • green capsicum
  • butter
  • tomatoes
  • ripe olives, drained
  • oregano
  • chicken meat, minced
  • spaghetti
  • garlic
  • shredded cheddar cheese (CHEESE!!! I LUV CHEESE!!!)
  • mushroom soup (Campbell's the best!)
  • water
  • parmesan cheese (MORE CHEESE!!!!) XD

So on this very day, in the month of July, a very special day.
It is the first day I step into the kitchen in 2009. haha.
Totally forgetting how to cook food, I stood dumbly in the middle of the kitchen for 2 seconds before reacting, 'I need to find a workbench!' [or whatever you call it]
Da-di-da-di-dah!
I collect my ingredients and began the preparations.
Firstly, I collected water in a pot [about 1/3 of the pot] and placed it over the stove to boil. [water is heating up.... very slowly...]
Next, I chopped up 25g of onion [ekk! onion!], 20g of green capsicum, 132g of tomatoes, a clove of garlic and 10g of ripe olives [which is 2 olives].
Then, I heat the butter [2g] on the frying pan[it was melting already! Not on the frying pan yet!] then add garlic. =>
I add the chopped onions and green capsicums to saute.
YAHH! The water has boiled, so i add the spaghetti in. Then add tomatoes, olives and oregano into frying pan.
Take out cooked spaghetti and put on a clean plate.
Then, I add minced chicken meat into the water and boil it.
Once it is cooked, I add it in the mixture. [cook cook cook some more...]
Turn off fire and grease the baking tray with oil...[i think it was peanut oil and i accidentally pour too much!!! Oh No!]
Then,
Take half of that amount of spaghetti and put in the tray.
Pour half of the mixture over the spaghetti in the tray.
Sprinkle half of the amount of cheddar cheese[~20g].

Place the rest of the spaghetti in, then the mixture, then the cheese again.
Next, open the can of mushroom soup [gogo, campbell! +mushroom soup's my favorite!]
Add very little water about 20ml to it and stir, like crazy, until the soup is smooth.
Then pour over the spaghetti.
Put into oven for baking and set oven at 180 degrees Celsius for 25 to 30 mins.
Once it's done, I sprinkle a little parmesan cheese on top. [can't upload pic, don't know why... :( ]

Vuah-lah! Completed, yah!

I thought that during this a little panicky but still wholesome experience set me on the right track. I know what are some of my weaknesses and my strengths. And I'll try to work on them. Also, I know that one has to know what they are doing specifically otherwise they'll be lost. Anyway, only one thing to say: Hwaiting! (Fighting! = have that fighting spirit) [ a way of cheering self or other on to do their best]

Sensory Evaluation Results?
About the same, a little oily,salty. Looks slightly brown, off-white. Lumpy, wrinkled, creamy...
The feeling in the mouth is creamy, thick.

Things I need to change:
-use less oil!
-use more water! [soup too thick, hence very salty]

that's about it i think. haha. Done!
